3 lb/1.3 kg whole chicken
8 cups water or chicken broth
2 carrots, peeled and cubed
2 celery stalks, cut in small pieces
1 medium onion, chopped
2 garlic cloves, peeled and crushed
1 cup orzo pasta
1 tsp salt
1/2 tsp pepper
juice of 1 lemon

Cook chicken. I do it in the pressure cooker with about 4 cups of water for 20 mins. ( you can cook in slow cooker, oven or boil)
While chicken is cooking add carrots, celery, onion, crushed garlic, salt, pepper and orzo to another 6 cups of chicken broth in a large pot. Bring to a boil and then simmer approx. 20 mins or until pasta is cooked and veggies are tender.
When chicken is cooked, cool and remove meat from bones. Chop into small pieces or shred with 2 forks. Strain liquid from cooking the chicken into the veggies and pasta.
When the pasta is cooked, add the chicken and the juice of the lemon and serve.
Add more chicken broth if needed.
