8 medium potatoes
1 lb. cubed Velveeta cheese
1 C. mayonnaise
1/2 C. chopped onion
1/2 lb. bacon, cooked and crumbled
salt and pepper to taste
Directions:
Directions:
Peel and dice potatoes. Boil until tender. Combine potatoes with Velveeta cubes, mayonnaise and onion. Place in 9x13 inch baking dish. Top with bacon. Bake 325º oven for 1 hour.

May be assembled ahead of time, refrigerated and baked later.
