2 Tablespoons cooking oil
2 pounds pork loin, sliced
1 onion, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic salt
1 bay leaf
1-1/2 cups orange juice
2 boxes long grain and wild rice

Directions:
Directions:
In large skillet, heat oil over medium-high heat. Add sliced port loin; brown on both sides, turning once. Add chopped onion, salt, pepper, garlic salt and bay leaf. Pour orange juice over all. Cover, educe heat to low, and simmer until meat is tender, about 30 minutes, adding water if necessary to maintain sauce. Meanwhile, prepare rice according to package directions. Spoon rice onto a platter. Place loin slices on top of rice; pour sauce over the entire dish. Garnish with sliced red, yellow and green peppers, if desired.
