6 large jalapeno peppers
12 slices of bacon (thin is fine)
8 oz. cream cheese (softened)
1/2 c. grated sharp cheddar cheese
1/2 t. minced garlic
1/2 t. cumin (if you like cilantro chop a T. or so of that and use instead)

Directions:

Put on gloves. Wash peppers. Slice in half lengthwise. Remove seeds. Mix together cream cheese, cheddar cheese, garlic, and cumin (or cilantro). Fill peppers with cream cheese mixture. Wrap a slice of bacon around the pepper and close with a toothpick. Heat oven to 400º. Line a cookie sheet with foil. Place a rack on the cookie sheet. Place peppers on rack. Bake for 15-20 minutes until bacon is done (longer if needed). Can also be cooked on the grill.

If the peppers burn your fingers rinse your fingers with rubbing alcohol to take the burn out.
