Sweet and Sour Chicken

4 boneless, skinless, chicken breasts (cut into 2" strips)
1 large onion cut into 2" pieces
1 large green bell pepper cut into 2" pieces
1 can of pineapple chunks or tidbits (drained, reserve the juice)
2 T. oil



Directions:
Directions:
Heat oil on medium heat. Add chicken. Cook until outside is white. Add onion and peppers. Cook additional 10 minutes stirring frequently. Add Sweet and Sour Sauce and pineapple. Cover and simmer for 10 minutes or until thickened. Serve over rice.

Reserved pineapple juice (add enough water or chicken broth to make 1 cup)
1/3 c. ketchup
2 tsp. minced garlic
1/4 c. soy sauce
1 T. vinegar
2 T. cornstarch
1 T. minced ginger
1/4 tsp. crushed red pepper

Mix all together. Make sure there are no lumps of cornstarch.
