3 egg yolks
1 cup sugar
5 Tbsp cornstarch
2 lemons - rind and juice
2 cups boiling water
1/4 tsp salt
2 Tbsp butter (cut into pads)
1 9 inch pie shell (baked)
3 egg whites
6 Tbsp sugar

Directions:
Directions:
Preheat the oven to 400 degrees.
Over a double boiler beat egg yolks.
Combine 1 cup sugar and the cornstarch and add to yolks.
Gradually add the lemon juice, rind, boiling water and salt.
Cook until thick, stir occasionally.
Remove from heat and add butter. Stir.
Pour the cooked pie filling into cooled pie shell.
Beat the egg whites, add 6 Tbsp sugar and beat until stiff.
Put on top of the filling.
Bake at 400 degrees until brown.
