4 medium-sized Vidalia onions
8 oz pepper jack cheese
8 oz cream cheese.
1 cup mayonnaise

Directions:
Directions:
Grate cheese in a food processor. Set aside. Clean onions and chop in food processor. Combine the onions, cheese, cream cheese and mayonnaise in the food processor. Bake in preheated oven at 350°F in an oiled casserole dish until mixture is bubbly and browning. Serve hot with tortilla chip scoops.

Vidalia is a copyrighted term applied to several varieties of sweet onions grown in a specific geographical region of Georgia surrounding the town of Vidalia, where the soil is particularly low in sulfur -- the component that makes most onions sharp and pungent. The different varieties are unusually sweet compared to other onions.
