Whoopie Pies:
½ cup butter softened
1 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 cups all purpose flour
⅓ cup cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup buttermilk
Filling:
6 Tablespoons butter
1½ cup confectioners sugar
1 jar marshmallow cream (7 ounce)
⅛ teaspoon salt
1 teaspoon vanilla
optional pink food coloring

Directions:
Directions:
Preheat oven 350º. Makes 12 pies.
Beat sugar, and butter until fluffy, Beat in egg and vanilla. Mix dry ingredients together in separate bowl and add half into butter/egg mixture. Add milk and other half of dry ingredients. Mix on low until ingredients almost incorporated. Drop 2 Tablespoons of batter in whoopie pie pan or on cookie sheet in uniform circles. Use spoon to bring to edges of circle. Bake 8-10 minutes. Cool 8 minutes before removing from pan. Cool cookie completely before filling. To assemble Spread filling on one whoopie pie and sandwich two pies together.

Filling:
Beat butter until fluffy, add sugar and salt. Beat well. Blend in marshmallow cream, vanilla and food color if desired. Filling can be kept in frig up to one week. Spread filling on one whoopie pie and sandwich with another.
