1 T. oil
1 large onion chopped
8 oz. cream cheese
1 small can enchilada sauce (red or green - as you prefer)
1 can rotel tomatoes
1 can black beans (drained and rinsed)
1 can corn (drained and rinsed)
1 can chicken broth
2 c. chopped chicken (can use rotisserie or chopped, boiled breast meat)

Directions:
Directions:
Saute onion in oil. Add remaining ingredients. Simmer for 15 - 20 minutes on medium heat. Serve with grated cheddar cheese, sour cream, corn chips, or toppings of your choice.
