1 whole chicken (cooked and de-boned) or 1 rotisserie chicken de-boned
3 T. butter
1 chopped onion
1 can mushroom soup
1 can cream of chicken soup
1 can chicken broth
1 can rotel tomatoes
1 small package corn tortillas (10)
8 oz. shredded cheddar cheese

Directions:

Melt butter in 6 quart pan. Add onion and saute until translucent. Add soup, broth, and tomatoes. Mix together and heat until hot. Add chicken and stir.

In a 8 x 13 inch pan layer corn tortillas, chicken mixture, 1/3 of cheese, and repeat ending with cheese. Bake in a 350º
oven for 45 minutes uncovered. Allow to cool about 10 minutes and then serve.
