8 soft-shelled crabs, cleaned
salt and pepper
1 egg, beaten with a fork
2/3 cup flour
1/3 cup breadcrumbs
3-6 Tbs. butter

Directions:
Directions:
1. Preheat oven to 200º F
2. Wash and dry crabs. Sprinkle with salt and pepper.
3. Dip crabs in egg, then coat with mixture of flour and breadcrumbs.
4. Heat frying pan. Melt 3 Tbs. butter over medium heat and fry crabs, a couple at a time, for about 4 minutes per side. Add more butter to the pan, as needed, to finish frying all of the crabs.
5. Remove saute`d crabs to a baking pan and put in the oven to keep warm until they have all been cooked.
