Ingredients: 1 1/2 cup cornmeal 1 Tablespoon garlic powder 1 Teaspoons onion powder 1/2 -1 teaspoons cayenne pepper 1 teaspoon black pepper Salt to taste Peanut Oil US-Farm Raised Catfish fillets

Directions: |
Directions:Combine breading ingredients and mix thoroughly.
Heat peanut oil in dutch oven, cast iron, or deep fryer to 350º.
Rinse catfish fillets and slice down the center to create 2 strips and mix into the breading, coating entire fillet.
Place strips into oil for 3-5 min, until golden brown and slightly floating.
Remove from oil and let dry on wire rack. |

Notes: If you're feeling lazy, store bought fish breading works as long as CORN MEAL is the first ingredient, not CORN FLOUR. We like Louisiana Seasoned Crispy Fish Fry the best.
Peanut oil is best but vegetable oil works too.
Take advantage when you're cooking and throw in some Savannah Classics Sweet Corn Hushpuppies (found at most grocery stores) with your fish. Or make your own!
Don't buy Asian catfish!
