4 C. sliced peaches
1 C. sugar
1/2 C. butter
1 1/2 c. flour
3/4 tsp. salt
1/2 C. shortening
1/4 C. plus 1 Tbsp. cold water

Directions:
Directions:
Combine first 3 ingredients in saucepan; bring to a boil and cook over low heat until tender and thickens. Pour peach mixture into lightly buttered 10 x 6 x 2" baking dish. Set aside.
combine flour and salt; cut in shortening with pastry blender until mixture resembles coarse meal. Sprinkle water and stir into a ball. Roll out 1/8" thick and cut into strips. Use half of the dough strips and arrange in lattice design over peaches. Bake at 350º for 35 minutes. take out and press pastry into peach mixture and repeat the lattice design over peaches. Bake an additional 40 minutes.
