Potatoes enough to feed family
1 onion
olive oil
Greek seasoning or Cajun seasoning
paprika
Parmesan grated cheese
* potatoes can be substituted with fresh or frozen vegetables. As cauliflower, broccoli, brussels sprouts, zucchini, yellow squash.

Directions:
Preheat oven to 425. In jelly-roll pan, toss potatoe chunks or fingerlilngs cut lengthwise into quarters, and onion slices separated into rings with olive oil, paprika, and Greek seasoning or Cajun seasoning. Arrange in single layer on pan; sprinkle parmesan cheese over potatoes before roasting and after, roast 15 minutes. Stir pototoes and roast an additional 15-20 minutes or until golden brown and tender. Salt and pepper to taste. The browner the potatoes or vegetables the sweeter they taste.
