"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
BROCCOLI & BLUE CHEESE PIZZA
INGREDIENTS:
2 LB BAG PIZZA DOUGH (SUPERIOR BAKERY) TWO – 1LB BAGS CAN BE KNEEDED TOGETHER
1 BAG FROZEN CHOPPED BROCCOLI – THAWED & SQUEEZE WATER OUT
(BROCCOLI CAN BE DRFROSTED IN MICROWAVE 5 MINS)
1 CAN BLACK OLIVES (SLICED)
1 BOTTLE KEN’S BLUE CHEESE DRESSING (ABOUT ¾ OF BOTTLE)
HOT PEPPER RINGS LIGHTLY CHOPPED (1/4 – 1/2 CUP FOR YOUR PREFERENCE)
¼ TSP HOT PEPPER FLAKES – YOUR PREFERENCE
1/4 LB. BORE’S HEAD HOT CAPPY HAM (NOT CAPPICOLA) SLICE IN HALF – THEN IN THIRDS TO MAKE TRIANGLES.

Directions:
Directions:

GREASE BOTTOM ONLY OF COOKIE SHEET. DO NOT GREASE SIDES OF PAN. IT PREVENTS THE DOUGH FROM BREAKING AWAY AND SHRINKING THE PIZZA. 2 LB OF PIZZA DOUGH FITS PERFECTLY FOR AVERAGE COOKIE SHEET. IF YOU CAN’T FIND A 2 LB BAG AND ONLY HAVE 1 LB BAGS, BEFORE MAKING PIZZA, COMBINE BOTH DOUGHS TOGETHER TO FORM ONE BALL OF DOUGH.

SPREAD BLUE CHEESE DRESSING OVER DOUGH USING ABOUT ¾ OF BOTTLE. (SAME AMOUNT OF A RED SAUCE OVER A PIZZA)

IN A SEPARATE BOWL - PUT CHOPPED BROCCOLI, SLICED OLIVES, CHOPPED PEPPER RINGS AND RED PEPPER FLAKES TOGETHER.

SPRINKLE BROCCOLI OVER BLUE CHEESE PIZZA DOUGH. PAT LIGHTLY INTO PIZZA.

TAKE CAPPY HAM TRIANGLES AND POKE INTO PIZZA, JUDGING BY THE SIZE OF PIZZA SLICES YOU WANT WHEN PIZZA IS BAKED. I DO 4 SQUARES BY 5 SQUARES -- (20 SLICES OF PIZZA OR 3 SQUARES BY 5 SQUARES FOR 15 SLICES OF PIZZA).

BAKE PIZZA AT 400* FOR ABOUT 30 MINUTES. CHECKING BOTTOM OF PIZZA CRUST TO A DARK GOLDEN BROWN. YOU CAN USE A KNIFE TO BREAK AWAY THE PIZZA CRUST FROM THE SIDE AND LIFT. YOU WANT THE CRUST TO BE CRISPY, SO DON’T TAKE OUT PIZZA TOO SOON. IF DURING BAKING YOU SEE AIR BUBBLES IN THE PIZZA, POKE WITH A KNIFE TO BRING THE DOUGH BACK DOWN. LOOK FOR THE COLOR OF A WELL DONE CROISSANT!
