Crust:
1 package of oblong graham crackers
¼ cup cane sugar
¼ cup soft butter

Filling:
4 egg yolks
½ cup sugar
¾ cup lemon juice
½ tsp salt
1 envelope Knox gelatin
1 tsp lemon peel

4 egg whites
½ cup sugar

Directions:
Directions:
Preheat oven at 375º

Graham cracker crust: Crush graham crackers and mix with sugar and soft butter. Blend well and press into pie pan.
Bake at 375º for 8 minutes. Cool on wire rack.

Filling:
Combine egg yolks, ½ cup sugar, lemon juice, salt and gelatin. Cook in a double boiler pan until thick. Add lemon peel and cool.

In separate bowl, beat egg whites until stiff adding ½ cup of sugar gradually. Mix the egg white mixture with the lemon mixture until blended. Fill graham cracker crust. Chill
Serve with whipped cream. Also can decorate with fresh raspberries.
