pie crust, baked per directions, cooled
½ onion, sautéed
3 med/large tomatoes, sliced thin
1 tsp. salt
⅓ tsp. garlic powder
¾ Tbsp. dried basil
pepper to taste
½ c. cheddar, shredded (I use sharp)
½ c. swiss (I use slices since I can't find shredded)
¼ c. mayo or cream cheese (I use cream cheese, softened to spreadable in microwave)

Directions:
Directions:
Lay tomatoes in single layer on paper towels and sprinkle with salt. Let sit 10 min or more then blot out excess moisture. Layer ½ of tomatoes, seasonings, cheese. Repeat for 2nd layer. Spread mayo or cream cheese over the top. (I'm not sure how to actually spread the cream cheese over grated cheese, so I just make lots of small dabs and let it spread together on its own in the oven.)
Bake at 350 for 30 min. or until bubbly.

I discovered this visiting "The Tomato Pie Café" in Pennsylvania with my friend, Missy, and fell in love with it. I came home and combined various recipes to create this one.
