3 lbs beef chuck roast
2 cups beef broth
1 cup water
¼ cup soy sauce (can use low sodium)
1 large onion, thinly sliced
4 cloves garlic, chopped
2 TBS Worcestershire sauce
4 fresh rosemary sprigs
4 fresh thyme sprigs
Fresh ground pepper

For sandwiches:
Hoagie rolls
Sliced provolone
Chopped fresh parsley
Melted butter for brushing rolls

Directions:
Directions:
In a slow cooker, combine beef chuck roast with listed top ingredients.

Cover and cook on high until beef is tender- 6 hours. Transfer beef to cutting board and thinly slice. Skim fat off au juice and pour defatted beef juice in bowls for dipping.

Make sandwiches:
Preheat oven to 350º. Top hoagies with meat, provolone and parsley. Brush top of rolls with melted butter and bake until cheese is melted around 5 minutes.

Serve sandwiches with au jus for dipping.
