1/4 cup flour
1 teaspoon garlic salt
1/2 teaspoon black pepper
2 pounds pork tenderloin, cut into 1 and 1/2 inch slices.
2 tablespoons olive oil
1/3 cup balsamic vinegar
1/2 cup chicken broth
2 teaspoons lemon zest
1 tablespoon capers

Directions:
Directions:
Place flour, garlic salt and pepper into a ziploc bag and shake to mix.
Add pork pieces and shake to coat.
Heat the oil in large skillet over medium heat.
Cook the pork medallions until golden brown, 2-3 minutes on each side.
Pour in the balsamic vinegar and chicken broth.
Bring to a boil, then simmer for 3-4 minutes.
Remove pork from skillet onto a serving platter.
Stir lemon zest and capers into the simmering sauce until thickened.
Pour over pork and serve.
