3 C. all purpose flour
1 tsp. baking powder
1 tsp. soda
1 tsp. salt
1 Tbsp. cinnamon

3 Eggs
2 C. sugar
1 C. vegetable oil
2 tsp. vanilla
2 C. shredded zucchini
1 C. pecans(chopped)

Directions:
Directions:
Combine first 5 ingredients and set aside. Combine eggs, sugar, oil & vanilla in large bowl and beat at medium speed until well blended. Stir in zucchini and pecans. Add dry ingredients, stirring until moistened.
Spoon into 3 greased and floured 1 lb. coffee cans.
Bake at 350 for 55 to 60 minutes. Cool in cans 10 minutes, remove to wire rack and cool completely.
Serve with whipped cream and sprinkle with pecans if desired.
