Marinade:
1/2 cup coconut milk
1 clove garlic, minced
1 teaspoon curry powder
1 and 1/2 teaspoon brown sugar
1/2 teaspoon salt
1/2 teaspoon black pepper

3/4 pound boneless chicken, cut into strips
10 (6 inch) wooden skewers, soaked in water for 30 minutes

Peanut sauce:
1 cup coconut milk
1 tablespoon curry powder
1/2 cup peanut butter
3/4 cup chicken stock
1/4 cup brown sugar
2 tablespoons lime juice
1 teaspoon soy sauce
salt to taste

Directions:
Directions:
Stir together marinade ingredients.
Toss with chicken and marinate 2 hours or overnight.
Combine sauce ingredients except lime juice and soy sauce.
Simmer until smooth and thickened.
Stir in lime juice and soy sauce and season to taste with salt.
Thread chicken onto skewers and grill 4-5 minutes per side.
Serve with warm peanut sauce.
