Ingredients: 1/2 cup unsalted butter (soft) 1/2 cup shortening 1 cup Demerara Sugar (plus extra to roll balls in) 1 egg (room temperature) 1 Tbsp vanilla extract 2 1/4 cups all purpose flour 1/2 tsp baking powder 1/2 baking soda 1/2 tsp kosher sea salt flakes

Directions:Beat butter and shortening together in a large bowl using hand mixer. Add the Demerara Sugar and best until fluffy. Add egg and vanilla and continue mixing until thourghly combined. Combine flour, baking soda, baking powder and kosher salt in a medium bowl. Gradually add flour mixture to butter mixture to butter mixture, combing and scraping down the side of the bowl between additions. Do not over mix. Cover with plastic wrap and transfer to refrigerator to chill for at least 1 hour. Preheat oven to 350 degrees and line two baking sheets with parchment paper. Remove cookie dough from refrigerator and shape dough into 1 inch balls. Roll balls in extra Demerara Sugar. Place cookies on the cookie sheets. Space 2 inches apart. Flatten ballls slightly. Bake for 10 to 12 minutes or until golden brown, set but NOT crispy. Transfer to wire rack and allow to cool for 5 minutes.
