1 cup water
½ cup cubed butter
1 cup flour
¼ tsp salt
4 eggs

Filling:
One large vanilla pudding that you cook
Milk as stated on the box

Frosting:
2 oz semi-sweet chocolate
2 TBS butter
1¼ cup powdered sugar
2 to 3 TBS hot water

Preheat oven to 400º

Eclair shell:

In a large saucepan, bring water and butter to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny.

Using a tablespoon or pastry tube with a large tip. Form dough into 4” x 1½ inch strips on a greased baking sheet.
Bake for 350º for 40 minutes or until puffed and golden. Remove to a wire rack and immediately split eclairs open; removing tops and set aside. Discard soft dough from inside. Cool eclairs.

Mix pudding as per package instructions and cool.

For frosting, melt chocolate and butter in a double boiler or microwave. Stir until smooth. Stir in powdered sugar and enough hot water to achieve a smooth consistency. Cool slightly. Frost eclairs and store in refrigerator.

Makes around 9 eclairs and can be doubled.
