Fruit
1 small pineapple, peeled,cored and cut into bite-sized pieces
2 crunchy green apples, cored, quartered and cut into bite-sized pieces
2 pears, not too ripe, cored and cut into bite-sized pieces
1 mango, not overly ripe, peeled and cut into bite-sized pieces
1/2 cucumber, peeled, deseeded and cut into bite-sized chunks

Dressing
1 1/2 tbsp tamarind paste
zest and juice of 1 lime
2 - 3 tbsp palm or brown sugar
3 tbsp toasted peanuts, with touch of salt and then crushed
1 chili, finely chopped with 1/2 the seeds

Directions:
Directions:
First make the dressing - mix tamarind paste, lime juice and zest, sugar and chili. Season with a little salt and pepper. Mix well and taste, adjust seasoning as necessary.
Toast peanuts in a dry frying pan with a pinch of salt until golden and toasted. Wrap nuts in a clean tea towel and run rolling pin over them to crush. Mix into the dressing.
Combine fruits and cucumber in a serving bowl. Add 1/2 the dressing and toss well. Taste and add more dressing as needed.
