3 lb boneless pork loin roast
1/4 cup honey
2 tbsp Dijon mustard
2 tbsp prepared oil and vinegar dressing
1/4 cup shelled pistachios, chopped
2 lb Yukon potatoes, cut in half
2 cups vegetable or chicken broth

Directions:
Use a sharp knife to score fat on pork roast; place roast on rack in roasting pan. Mix together honey, mustard and dressing; spoon over pork. Roast in pre-heated 425ºF oven for 15 minutes. Cover loosely with a sheet of foil; reduce oven temperature to 325ºF, roast pork until thermometer inserted in pork registers 160ºF. When pork is cooked, sprinkle with pistachios and let sit for 15 minutes covered before serving.
Meanwhile roast potatoes
When pork is resting add broth to roasting pan, stir well. Bring to a boil and continue to boil until gravy is slightly thickened. Season gravy with sea salt and black pepper. garnish pork with fresh rosemary.
