Marinated Tortellini Salad Recipe

cup white vinegar
cup olive oil
2 tsp. Dijon mustard
2 tsp. fresh lemon juice
tsp. sugar
1 tsp. each salt, pepper
tsp. greek seasoning
dash of cayenne
1 - 14 oz. can artichoke hearts,
drained and halved
1 cup large pitted olives
1 red bell pepper cut up in pieces
1 - 9 oz. pkg. cheese tortellini, cooked
1 T. capers
lb. shrimp, cooked, peeled, deveined
1 cup mushrooms

In a bowl, combine vinegar, olive oil, mustard, lemon juice, sugar,
salt, greek seasoning, pepper and cayenne. In a medium
bowl, combine artichoke hearts, mushrooms, olives, bell pepper,
tortellini, capers and shrimp. Add marinade and toss to coat.
Marinate in frig for 3 hours. Serve chilled.
