1 1/2 lbs. cubed pork
1 large onion, chopped
2 tbsp. oil for frying
3 tbsp. paprika
3 c. water
1 large can or bag (about 28 oz.) sauerkraut - drained well
1 c. sour cream

Directions:
Directions:
1. In a large pot, sear the pork in oil until browned on all sides. Set aside, and in the same pot fry the onion until tender-translucent, but not browned.
2. Return the meat to the pot and add the paprika and water. Bring to a boil, then reduce heat and simmer for one hour.
3. Add the sauerkraut and after returning to a simmer, cook an additional 30 minutes. Add the sour cream and cook 10 more minutes.
4. This can be served over egg noodles, rice or potatoes.
