2 lbs. chicken thighs
Butter for frying
Salt
2 tsp. basil
1 tsp. cayenne
2 cans stewed tomatoes
1 can mushrooms
1/4 c. green peppers
1 medium onion
Parmesan cheese to sprinkle
Gumbo filé seasoning

Directions:
Directions:
1. Remove skin from chicken and sauté in butter. Season with salt, basil, and cayenne.
2. Transfer checken to pot, add tomatoes, mushrooms, green pepper, onions and little parmesan cheese. 3. Cover and simmer 30-45 minutes. Sprinkle with gumbo filé seasoning. Bring to a boil to thicken. Let stand.
4. Serve over rice or pasta.
