1 1/2 lb. onions, thinly sliced
3 tbsp. butter
1 tbsp. olive oil
1 tsp. salt
1/4 c. sugar
3 tbsp. flour
2 qts. beef bouillon
1/2 c. dry white wine
Sherry
French bread
Swiss cheese
Gouda cheese
Parmesan cheese

Directions:
Directions:
1. Cook onions in butter and olive oil covered, 15 minutes.
2. Uncover, raise heat to medium high; add salt and sugar. Cook 40 minutes until golden brown.
3. Sprinkle flour and stir 3 minutes. Add beef bouillon, white wine and sherry. Boil, then simmer, partly covered 30-40 minutes.
4. Ladle into serving bowls and place on cookie sheet. Float bread on soup, add Swiss cheese, gouda (shredded), and parmesan. Bake 20 minutes at 325º.
