1 pound uncooked boneless skinless chicken breast(s), four 4-oz pieces
(I sometimes cut the chicken into smaller sizes so more of it gets the crispy cornflake crust!)
1/2 tsp table salt (OMIT Salt if using Cajun Seasoning*)
1/2 tsp cayenne pepper (OR: *1 tsp Cajun Seasoning only, then OMIT salt & cayenne)
1 cup cornflakes cereal
1- 2 Tablespoons margarine (or butter), melted

Directions:

Preheat oven to 400ºF. Line baking sheet with foil and spray with cooking spray.

Combine corn flakes, salt and cayenne pepper (or Cajun Seasoning) together in a baggie. Crush with a mallet or rolling pin.

Place chicken on baking sheet and pour cornflake mixture over each, pressing lightly to adhere.
Melt the margarine and drizzle over each chicken breast.

Bake until chicken is tender and no longer pink in center, about 30 minutes, depending upon thickness of chicken (there is no need to flip the chicken during baking).

Great dipped in Marinara too.
