Ingredients: Mold for Eggs 4½ cups granulated sugar 3 Tablespoons water cornstarch Royal icing: 2 Tablespoons plus 2 teaspoons meringue powder 3 cups confectioners sugar 4 Tablespoons plus 2 teaspoons warm water color gels for coloring.

Directions:Eggs: Mix sugar and water. Powder inside of Egg molds with cornstarch. Spoon damp sugar into molds packing into egg mold. Take knife and level across top. Hollow out with spoon center of egg making enough room to place candied eggs, bunny and green coconut for grass. Place eggs on wax paper and let dry 1 to 1½ hour. Cut tip of egg off on both halves making big enough for peep hole and matching cut length to other half.. Let dry until hard. Use Royal icing to decorate with first in middle of egg add coconut, miniture eggs and bunny. Seal with Royal icing. Use decorative tips and decorate egg. Royal icing: Beat all ingredients for 10 minutes with portable electric mixer. Keep icing covered with damp cloth. Divide into bowls and color. Use cake decorating tips and icing tube or bag. |
