large dates
pecan halves, roasted
2 lb confectioners sugar (reserve ⅓ cup to roll dates in)
½ cup butter, room temperature
1 tbsp cream
1 tsp vanilla
¼ tsp peppermint extract

Directions:
Directions:
Mix butter, sugar, cream, vanilla and peppermint in blender until creamy. Roll into tiny balls and put between two pecan halves like a tiny sandwich. Open dates lengthwise and carefully insert the pecan/mint sandwich. Roll the date in confectioners sugar.
