Wash 8-10 pounds of pinto beans. Boil in water and after it comes to boil, pour water off. Add new water and pressure cook it.
Melt 2# of beef suet. Add 4# of diced onions, 2 jars of Gephardt Chili powder, 2 to 3 garlic buds, 1 to 2 teaspoon of oregano, 1 teaspoon of cumin and a gallon of water. Simmer well.
Bring 12 large red dry chili to boil. Pour off boiled water, remove tops and seeds. Blend with liquid in blender. Add to above liquid.
Cook 4 -6 pounds of hamburger in 1-1 ½ # of lard. When cooked add liquids, beans and either canned green chili or 12 fresh chili chopped.
Add salt/pepper.

Simmer all day.
Lard helps to thicken the beans and remember always to cool beans before you cover them or they will sour.
You can put lid on and freeze them when cool.
