Crust:
2 cups Graham cracker crumbs
¼ cup ground almonds
¼ cup shredded coconut
⅓ cup unsalted butter, melted
2 teaspoon sugar
½ teaspoon orange zest

Cake:
3 packages cream
¾ cup sugar
4 eggs
1 teaspoon vanilla
1 cup sour cream

Mirror Glaze:
¾ cup frozen guava purée
½ orange zest
2 cups guava purée
¼ cup light corn syrup
1½ cups sugar
2 cups water
20 gelatin sheets

Crust:
1. Combine all ingredients and press lightly on the bottom of a 9-inch or 10-inch spring form pan.
2. Bake at 350ºF for 10 minutes. Let cool.

Filling:
1. Beat cream cheese and sugar . Add eggs one at a time.
2. Add all other ingredients and mix well.
3. Pour into the pan. Bake at 375ºF and bake for 35 - 40 minutes or until lightly set.
4. Let cool for 5 hours and put in the fridge for another 5 hours before serving.

Mirror/Glaze:
1. Soak the gelatin sheets in cold water.
2. Bring purée, water, sugar and syrup to a boil. Add the gelatin. Strain and let cool before pouring it on the cheese cake.
