Ingredients:  
1 pound small zucchini , sliced thinly
2 1/2 to 3 cups corn, 4 or 5 medium-sized ears
3/4 cup chopped onion
1/3 cup chopped green peppers
3 medium sized tomatoes, peeled and coarsely chopped
2 Tbs vegetable oil
1/4 tsp sugar
1 tsp salt
1/4 tsp pepper
1 1/2 cup diced stale bread
1/3 cup sharp cheese

Directions:
Directions:
Combine zucchini, corn, onion, peppers, tomatoes, oil, sugar, salt and pepper in sauce pan. Cook stirring gently over medium heat for 10 to 12 minutes, or until zucchini and corn are just cooked.
Poor into a casserole dish and top with bread and cheese cubes.
Bake 375º until cheese melts and bread is crisp. Serve hot.
