10 organic gold potatoes (small), rinsed
1/2 teaspoon salt (for boiling)
1 whole avocado
1/2 small lemon, juiced
2 Tablespoons fresh chives, minced
1/4 teaspoon Himalayan Pink Salt
1/4 teaspoon Organic Ground Black Pepper

Directions:
Directions:
In large pot, boil potatoes/salt for 10 minutes or until tender; drain, rinse and cool. Cut potatoes into quarters. In large bowl, mash avocado; stir in lemon juice, chives, pink salt and pepper. Add potatoes and mix until coated. Chill before serving.
