5 lbs of potatoes (I use russet or other baking potatoes)
1/2 c sweet pickle juice
4 T mayonaisse
1 small jar of Vlasic sweet pickles or sweet gherkins (diced)
1 small white onion (diced)
7 eggs hard-boiled (diced)
salt / pepper (to taste)
yellow mustard (to taste)

1. Peel potatoes. Cut into small cubes. Boil --- this is tricky. The potatoes need to be soft, but not too mushy. It should probably take about 15 minutes at a boil. Keep watching them and don't overcook.
2. Hard boil the eggs. Put in pan and cover with water. Bring to a boil and boil for 10 minutes. Cool under cold running water and allow to cool. Peel and dice.
3. Mix all the ingredients. Keep refrigerated.

Nanny used to make this and I loved it! It's kind of unusual to have chunks of sweet pickles in Potato Salad, but that's what I loved about it! This recipe make A LOT---you can halve the recipe or adjust it.
