1/2 whole-wheat English muffin
1 slice reduced fat (2%milk) Swiss cheese, torn to fit the muffin
1/2 cup liquid egg substitute or one egg, scrambled
1 1/2 teaspoons finely chopped scallion (green part only)

Directions:
Directions:
Toast the English muffin and top with cheese pieces and let stand until the cheese is melted.
Spray a small nonstick skillet with olive oil or melt a bit of butter over medium heat. Add the egg and cook until edges are set.
Transfer the egg patty to the muffin and sprinkle with the scallion. Serve hot, with mayo or horseradish
