Ingredients: 2 C. of plain Greek yogurt Juice of one lemon 2 cloves of garlic 2 small or 1 large cucumber finely chopped or shredded 1 tsp of salt (more to taste) 1 - 2 tbsp of fresh dill - finely chopped 1 tbsp of parsley - finely chopped

Directions:1) shred cucumber and squeeze in clean or paper towel to strain excess juice 2) combine all ingredients into a bowl or tupperware and mix to combine 3) add more salt and pepper as needed for your taste 4) refrigerate overnight or at least 2 hours 5) serve over rice, meat, veggies, falafel, etc. and enjoy! |

Notes: Neither me nor my mother are fond of cucumbers but love them in this, which can be a good way to use up extras you have around the house. It is a nice light sauce for the summer and can be used on a variety of things. I predominately use mine on falafel. The most important step in the recipe is probably the chilling, because this is how the flavors really come out. You can add other fresh herbs but these are the ones I enjoy best. Thyme could be a good addition.
