1 2 lb sirloin tip roast
1/4 c unsalted butter, softened
1 Tb freshly ground pepper
1 tsp Herbs de Provence

Directions:
Place roast on plate and bring to room temperature, about 4 hours.
Combine butter, pepper and herbs in bowl and mix well until blended.
Season roast with kosher salt and pepper. Spread butter mixture over roast, covering all sides.

Preheat oven to 500º.
Roast in preheated oven for 10 minutes ( 5 minutes per pound). KEEP OVEN CLOSED. TURN OFF OVEN AND LET SIT FOR 2 HOURS.

Remove from oven, slice and serve.

I make herb butter when I have lots of fresh herbs in the summer and mix with softened butter. I then freeze in logs so I can slice off pieces as needed.

I also use this recipe for Prime Rib Roasts.Remember to always preheat the oven to 500. The roast needs to cook at 5 minutes per pound in the hot oven and then shut the oven off. Example 2 lb roast cook 10 minutes, 4 lb roast cook 20 minutes. Keep door closed for 2 hours.

Worcestershire sauce, Coarse Salt & Pepper and Italian Seasoning to coat

Directions
Generously rub all sides and ends with salt, pepper and garlic powder.
Seal roast.
Prepare bath to 134- 57 C- 24 hours
Finishing Steps
Dry your meat. Heat your cast iron skillet. High heat oil, avocado, grapeseed etc and then Sear the meat 1-2 minutes all sides
Cut and serve!
