1-1/4 cups all-purpose flour
1 Tablespoon sugar
1/4 teaspoon salt
7 Tablespoons cold, unsalted butter, cut into 1/4-inch pieces
4-5 Tablespoons ice water

Directions:
Directions:
Whisk together first three ingredients in a medium bowl. Cut 7 Tablespoons butter cubes into flour mixture with a pastry blender (or a food processor) until crumbly. Add 4 Tablespoons ice water; stir (or pulse in food processor) until dough clumps together, adding more ice water by teaspoonfuls if dough is dry. Gather dough into a ball; flatten into a disk. Wrap in plastic wrap and chill at least one hour. Let dough stand at room temperature 10 minutes before rolling to desired shape and thickness.
