2 medium oranges, zested and juiced...
1 T sea salt, plus more for cooking...
2 1/2 t fresh thyme leaves, divided...
2 t freshly ground black pepper...
1 1/2 t granulated sugar...
2 pound flat iron steak...
1 T good olive oil...
1 shallot, finely chopped...
1 T soy sauce...
2 T unsalted butter, at room temperature...

Directions:
Directions:
Mix the orange zest, salt, 2 t thyme, pepper, and sugar...
Rub on both sides of steak...
Let sit at room temperature for 1 hour, covered...
Preheat grill or oven broiler to high...
Cook steak 7 to 8 minutes, turn over and cook 6 to 7 minutes or until temp. Registers 160º, take off grill and cover with foil for 7 minutes...
Slice on angle, serve with orange sauce...

Making the sauce

Place olive oil in a small sauce pan...
Add shallot and remaining thyme...
Cook 3 minutes, add 1/2 cup orange juice, simmer gently for 4 minutes...
Stir in soy sauce, lower heat and add butter to thicken, whisking for 2 or 3 minutes...
Season with salt according to your taste...

Ready to serve with steak, enjoy...
