5 Lb. red potatoes
4 hard boiled eggs, diced
1 cup mayonnaise
2/3 cup sweet relish
2 TB mustard
3 stalks celery, diced
1 medium onion, diced
1 TB celery seed
1½ tsp salt

Directions:
Directions:
Boil potatoes with skinks on until tender but not overdone. Remove skins, and dice into ½ inch pieces. Put in large mixing bowl.

Add diced hard-boiled eggs, diced onion, diced celery, mayonnaise, relish, mustard, salt, and celery seed.

Mix all ingredients well. Taste and adjust as needed.

If cooking potatoes in electric pressure cooker, cook potatoes with raw eggs placed on top of raw potatoes for 4 minutes, then do a quick pressure release. Immediately put eggs in ice water. Rinse hot potatoes under cold running water to stop cooking process. Add all ingredients, as provided in recipe.

The secret to this recipe is the celery seed; don’t leave it out.
