Homemade Chicken Noodle Soup Recipe

1 4-5 chicken ( I use boneless, skinless chicken breasts)
1 cup diced celery
1 cup chopped carrots
1 large onion, chopped
3 T parsley flakes
1 T basil

Noodles:
1 beaten egg
1/2 tsp salt
3 T milk
1 cup flour

Might need to add extra milk if too stiff. Mix together to form stiff dough. Roll out and leave for several hours. Cut in strips. Use extra flour to toss before drying.

Cover chicken, celery, carrots, onion, parsley and basil. I like to add a couple of bouillon cubes to add flavor. Cook until chicken is tender. Take chicken from soup and cut into bite size pieces. While soup is cooking you can make noodles and allow to dry. Also peel and cook 6-8 potatoes to make mashed potatoes.

20-30 minutes before serving time, add noodles to boiling soup and cook until tender. Cook potatoes and prepare them as you do mashed potatoes. Serve soup over mashed potatoes. It is delicious.
