1 yeast cake
1 c. milk
1½ tsp. salt
2 T. butter
¾ c. sugar
1 egg
3½ - 4 c. flour

Directions:
Directions:
Scald and cool milk. Mix yeast with milk. Add a little of the sugar. Add enough flour to make a stiff batter. Allow this to rise to double its bulk. Add melted fat, sugar, eggs (well beaten) and flour enough to make a stiff dough.
Knead, roll out to ¼ inch. Cut with floured doughnut cutter. Allow to stand on floured board until doughnuts rise (about 1 hour). Turn over and allow to finish rising. Fry in deep fat.
