15 oz.can of red salmon
1 T. finely chopped onion
1 T. finely chopped red or green bell pepper
1 egg
1/2 t. Old Bay Seasoning
1/4 c. bread crumbs

Directions:
Directions:
Drain the can of salmon (reserve liquid) and empty the can onto a plate. Carefully remove any large bones and scrape off any skin. Whisk the egg in a bowl and add the salmon, peppers, onion, Old Bay and bread crumbs. If it's too dry, add a little of the reserved salmon liquid.
Combine well with a fork. Divide into 4 balls. Shape each into a pattie.
Fry in a little olive oil over low heat for 15-20 minutes. Try not to turn the patties more than once since they crumble easily.

I always keep a can of red salmon in the pantry for a quick, last minute meal. Two cans will make 5 larger patties.
