1 egg, beaten well
2 T. mayonnaise
1/2 tsp. dry mustard
2 tsps. Worcestershire sauce
2 dashes of Tabasco sauce or any hot pepper sauce
1 T. parsley
1/3 cup unseasoned bread crumbs
1 Lb. lump crab meat
Butter
Oil
Lemon Wedges
Tartar Sauce (see recipe) or cocktail sauce (see recipe)

Optional: 2 T. finely chopped Italian frying pepper

Directions:
Directions:
1. Combine egg, mayonnaise, dry mustard, pepper and salt. Blend well.
2. Fold in crab, parsley and bread crumbs (and pepper, if adding pepper).
3. Divide crab into 8 portions. Shape into balls about 1/2 inch thick. Chill about 1 hour.
4. Heat butter and oil in large skillet until just sizzling. Fry crab until golden and crisp. Drain on paper
towels. Serve with lemon wedges and tartar or cocktail sauce.
