4 c. bajra flour
1 c. whole wheat flour
½ c. oil
2 to 2 1/4c. boiling water
½ tsp. salt
ghee or butter to rub on bajra roti

1. In a mixer add the bajra flour, salt and oil in the bowl and mix the ingredients well.
2. Add 2 cups of hot water and mix well until it forms a soft dough mixture.
3. Use the 1/4 cup water only if required.
4. Set aside for 10 mins to cool
5. Remove the dough mixture from the bowl and knead on the counter to mix the dough properly. If the dough is too soft. sprinkle a little bajra flour
6. Divide the dough into 8-10 equal parts
7. Flour the rolling pin and roll each part on a lightly floured wax paper. It is easy to roll the bajra mixture on the wax paper as it will not stick to the surface. You may have to turn the wax paper around to ensure that it forms into a round. Use a cake cutter if needed to make it round.
8. Using the wax paper remove the rotla from the wax paper and place on a hot frying pan or tava.
9 Brush the uncooked top with water. Check the bottom to see if it is cooked.
10. Once the bottom is cooked, flip with a spatula to cook the other side.
11. Remove onto a plate and brush with ghee or butter.
12. Serve with any curry
