Pie filling:
6 to 8 pears, peeled, cored and sliced
½ c. sugar
1 tsp. grated lemon peel
3 T. lemon juice

1 (9inch) pie shell, unbaked


Topping:
½ c. flour
½ c. sugar
½ tsp. ginger
½ tsp. cinnamon
⅓ c. butter

Pie Filling:
Toss pears with sugar, lemon peel and lemon juice. Turn into pie shell.


Topping:
Combine flour, sugar and spices in bowl. Cut in butter until mixture resembles crumbs (Do this in a food processor). Sprinkle mixture over pears.

Bake at 400º for about 45 minutes, or until pears are tender. May serve with whipped cream or vanilla ice cream.
