4 Boneless Skinless Chicken Breast
8 oz. Sour Cream
1 can Cream of chicken soup
2 T. Poppy Seed
I Sleeve Ritz Crackers
1/2 stick butter

Directions:
Directions:
Put chicken breast in a pot of water and boil until cooked (about 30 minutes). Remove chicken from water and allow to cool. While chicken is cooling, mix the sour cream, soup, and poppy seed in a medium bowl. Pull the chicken breast into small pieces and drop them in an 8 1/2 x 11 baking dish. Pour the soup mixture over the top of the meat and spread evenly.
Put butter into a bowl and microwave until melted. Crush the sleeve of Ritz crackers and stir them into the melted butter until all are mixed. Spread this mixture over the soup mixture evenly. Place into a 425º oven for approx. 20 minutes. When top of caserole is lightly brown, remove from oven and it is ready to serve.

This recipe is easy to double for a church supper or other event. Just use a much larger pan.
